The sun has got his hat on, hip, hip…well he did have his hat on, but it seems the forecast for this week is mostly rain. It’s still nice and warm at the moment and I’m sat here now with the back door open (and all the flies invading, I definitely need a fly screen), so as far as I’m concerned it’s summer and summer recipes are on the menu still. Fingers crossed for more BBQ weather as we have the ‘burger challenge’ planned!
How Much Did I spend?
The total bill was £43 and that included beer and extra bits for Saturdays BBQ, so I imagine this weeks actual food bill was probably around £28, which is a big improvement. I’m going to scour the cupboards this week and see what’s lurking in them that needs using up, I know I still have a lot of pasta, lentils, etc, so they’ll be featuring next week.
This Weeks Meals
A shorter week because I’ll be away Thursday and Friday, though Tom will be at home and will have to feed himself. There’s a few of my own recipes this week that I’ll try to get up on the blog as soon as I can, in particular the chicken tortilla wedges, which are a cinch and great for in this weather. I’ve linked up to a Nasi Goreng recipe, but I make mine slightly differently and will try and get that alternative version up too.

Tuesday – Spaghetti & Tuna Frittata with Green Bean, Walnut & Feta Salad – This was an unexpected hit. I was inspired by some recent posts about pasta ‘nests’, and I remembered I’d seen a recipe in a magazine years ago with something similar containing egg. I thought it looked a bit weird and never tried it. I’m so glad I have now as we both loved it, different, but in a good way. I will stick the recipe up soon.
Wednesday – Mother Mands Chicken Tortilla Wedges with Mexican Salad & Lime and Coriander Dip – This is a regular in our house, very quick and easy, but very filling and great for a movie night. The recipe will be added shortly.
Thursday & Friday – I shall be heading to Cheshire to visit friends and family, so Tom will have to fend for himself, I may make him something to reheat…I may not 😉
Saturday – Nasi Goreng – I haven’t made this in ages, we used to have it all the time. I varied the spices a little, you can actually use a nasi goreng paste, which I have tried before and was really good. I also added prawns to ours near the end of cooking, and rolled and sliced a herby omelette for the top, serving with fried onions and peanuts. I will have to make this again and put my version of the recipe up.
Sunday – BBQ?- BBQ was a no go as it was on and off drizzle, then when it did clear up there was quite a breeze. So we had roasted veg and chicken with halloumi and a garlic dip served with pitta bread.
Recipe Of The Week
Last weeks favourite was of course Arctic Cloudberry’s Finn Crisp Crusted Salmon served with Hasselback Potatoes & Dill Butter, which we dished up with asparagus and peas. We all loved the flavours in this meal and as big salmon fans it was a great new way for us to serve it. Hasselback potatoes will definitely be making a regular appearence now, a lot easier than I imagined and I have already devised a spicy version for Tom to try 😉
I have to also mention the fantastic BBQ we had this week. Tom’s cousin Kay made some delicious prawn and chorizo skewers and then served us a refreshing rhubarb and strawberry tequila cocktail. She will have her own blog soon, so I can link up to her recipes and crafts for you to check out 😉
